Sandrine also offers decadent chocolates, French pastries, gelato and ice cream sundaes. Sandrine’s is an authentic French patisserie, a place where you will satisfy your desire for sweet dishes and sweets. It’s also a place where you can bring a bit of France to dinner with homemade tourières, duck confit, pâtés and even duck fat. Both she and her husband studied French at Lenotre and Bellevue.
I visit Sandrine’s every Saturday from April to October after long hours of perusing the Farmer’s Market, but the real reason Sandrine’s is on my list in the Okanagan is her cake and chocolate making classes. Pasta class was added to her schedule around Christmas time.
In the afternoon, a class of 6 eager and hungry students learn how to make mocha, chocolate and caramel macarons. Sandrine generously shares her rich and silky ganache recipe and helps us learn how to make our own favorite version of the ultrafine pastry. As we all know after lunch, pasta can be messy and brutal if the ingredients are not weighed down to the last gram so quality or quality is not judged.
